- 4 slices of sourdough or white bread
- 1 cup fresh or frozen blueberries
- 2 tablespoons sugar
- 4 ounces cream cheese or brie
- 1 cup shredded mozzarella or fontina cheese
- 3 tablespoons butter
- Flaky sea salt for garnish
Instructions
- In a small saucepan, combine blueberries and sugar over medium heat, stirring until the blueberries burst and the mixture thickens, about 5-7 minutes. Remove from heat and let cool slightly.
- Spread cream cheese or brie on two slices of bread, and sprinkle with half of the blueberry mixture. Add shredded mozzarella or fontina cheese on top, followed by the remaining blueberry mixture and close with the other two slices of bread.
- In a skillet, melt 1 tablespoon of butter over medium heat. Add one sandwich, cooking until golden brown and cheese is melted, about 3-4 minutes per side. Repeat with remaining sandwiches.
- Slice sandwiches in half, garnish with flaky sea salt, and serve warm.
Notes
Feel free to use different types of cheese or bread based on your preference. For added flavor, consider adding a pinch of cinnamon to the blueberry mixture.
