  • 12 g (1½ tablespoon) Corn starch
  • 12 g (1½ tablespoon) All purpose flour
  • 1 teaspoon Vanilla extract
  • 28 g (2 tablespoons) Unsalted butter 82% fat
  • room temperature soft butter
  • 115 g (½ cups) Heavy cream 36% fat content

Instructions

  1. In a saucepan, combine the whole milk, granulated sugar, egg yolk, corn starch, all-purpose flour, and vanilla extract. Whisk until smooth, then heat over medium heat while stirring until thickened. Remove from heat and stir in the butter until melted. Allow to cool.
  2. In a separate bowl, whip the cold heavy cream until soft peaks form. Fold in the cooled milk mixture gently until combined to create a chantilly whipped cream layer.
  3. In another bowl, whip the heavy cream for the second layer until soft peaks form. Gently fold in the mascarpone, powdered sugar, and vanilla extract until well combined.
  4. Prepare your sponge layer by cutting the angel food cake into equal pieces or use a ready-made sponge cake.
  5. In a serving dish, layer the sponge cake at the bottom, followed by a layer of blueberry pie filling, then spread a layer of the chantilly whipped cream, and top with the mascarpone whipped cream. Repeat the layers as necessary.
  6. Finish with additional blueberries on top for decoration. Chill for at least 2 hours before serving to set the layers.

Notes

For best results, use cold ingredients and serve chilled. You can substitute fresh blueberries if desired.
