Ingredients

  • 2 cups blueberries
  • fresh or frozen
  • 2 tablespoons maple syrup
  • 2 cups old-fashioned rolled oats
  • 4 tablespoons chia seeds
  • 3 cup water or milk
  • 4 tablespoons maple syrup
  • 1 cup Greek yogurt
  • vanilla or blueberry yogurt
  • 23 teaspoons vanilla extract
  • 1 pinch salt

Instructions

  1. In a medium saucepan, combine the blueberries and 2 tablespoons of maple syrup over medium heat. Cook until the blueberries begin to burst and release their juices, about 5-7 minutes. Remove from heat and let cool.
  2. In a large mixing bowl, combine the old-fashioned rolled oats, chia seeds, water or milk, 4 tablespoons of maple syrup, Greek yogurt, vanilla extract, and a pinch of salt. Stir well until all ingredients are thoroughly mixed.
  3. Divide the oat mixture into 4 jars or containers, and top each with the blueberry layer. Cover and refrigerate overnight.
  4. In the morning, give the oats a good stir and enjoy! You can add additional toppings if desired.

Notes

You can customize the flavor by adding nuts or seeds on top before serving. Feel free to adjust the sweetness by adding more or less maple syrup.
