This Blueberry Peach Crumble combines the sweet-tartness of blueberries with ripe peaches, topped with a buttery, crunchy crumble that’s perfect for dessert any time of year.

  • 2 1/2 cups peeled and sliced peaches

  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 1/4 teaspoon vanilla extract
  • 1/2 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1/2 cup all-purpose flour
  • 1/2 cup old-fashioned oats
  • 1/3 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 6 tablespoons cold butter
  • diced

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine blueberries, sliced peaches, lemon juice, lemon zest, vanilla extract, granulated sugar, and flour. Mix gently to coat the fruit.
  3. Transfer the fruit mixture to a baking dish and spread it evenly.
  4. In another bowl, prepare the crumble topping by mixing 1/2 cup flour, oats, brown sugar, granulated sugar, salt, and cinnamon together.
  5. Add the cold, diced butter to the dry mixture and work it in with your fingers or a pastry cutter until it resembles coarse crumbs.
  6. Sprinkle the crumble topping evenly over the fruit mixture.
  7. Bake in the preheated oven for about 30 minutes or until the topping is golden brown and the fruit is bubbly.
  8. Let it cool slightly before serving.
