    • 2 large eggs, room temperature
    • 3/4 teaspoon vanilla extract

    For the Pastry Cream Filling

    • 2 cups whole milk
    • 1/2 cup granulated sugar
    • 4 egg yolks
    • 1/4 cup cornstarch
    • 2 tablespoons unsalted butter
    • 1 teaspoon vanilla extract

    For the Chocolate Glaze

    • 3 oz semisweet chocolate, chopped
    • 1/2 cup heavy cream

Instructions

Make the Dough

  1. In a large bowl, combine flour, yeast, sugar, and salt.
  2. Add warm milk, melted butter, eggs, and vanilla.
  3. Mix until a soft dough forms.
  4. Knead for 6–8 minutes until smooth and elastic.
  5. Place in greased bowl, cover, and let rise for 1 hour or until doubled.

Shape the Donuts

  1. Roll dough to 1/2-inch thickness.
  2. Cut into rounds using a donut cutter or glass.
  3. Place on tray, cover lightly, and let rise for 30 minutes.

Make Pastry Cream

  1. Heat milk in saucepan until warm.
  2. Whisk sugar, yolks, and cornstarch in bowl.
  3. Slowly add warm milk while whisking.
  4. Return mixture to saucepan and cook until thickened.
  5. Remove from heat, stir in butter and vanilla.
  6. Chill completely.

Fry the Donuts

  1. Heat oil to 350°F (175°C).
  2. Fry donuts 1–2 minutes per side until golden brown.
  3. Drain on paper towels and cool.

Make Glaze

  1. Heat heavy cream until hot.
  2. Pour over chopped chocolate and stir smooth.

Assemble

  1. Fill cooled donuts with pastry cream using piping bag.
  2. Dip tops into chocolate glaze.
  3. Let set and serve.
