  • 45 peaches cored and cut into wedges
  • 1 stick butter (8 tablespoons)
  • 1 ¼ cup sugar
  • 3 eggs
  • 1 cup all-purpose flour
  • ¼ cup almond flour
  • 3 tbsp bourbon
  • ½ tsp cinnamon
  • ½ tsp vanilla
  • 1 tsp baking powder

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a round cake pan.
  2. In a saucepan, melt the butter and mix in ¾ cup of sugar. Pour this mixture into the bottom of the prepared pan.
  3. Arrange the peach wedges on top of the butter-sugar mixture in the pan.
  4. In a bowl, beat the remaining sugar with eggs and mix in the bourbon, vanilla, and cinnamon.
  5. Gradually fold in the all-purpose flour and almond flour along with the baking powder until just combined.
  6. Pour the batter over the peaches in the pan.
  7. Bake for about 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let the cake cool for 10 minutes before inverting it onto a plate to serve.
