- 4–5 peaches cored and cut into wedges
- 1 stick butter (8 tablespoons)
- 1 ¼ cup sugar
- 3 eggs
- 1 cup all-purpose flour
- ¼ cup almond flour
- 3 tbsp bourbon
- ½ tsp cinnamon
- ½ tsp vanilla
- 1 tsp baking powder
Instructions
- Preheat your oven to 350°F (175°C) and grease a round cake pan.
- In a saucepan, melt the butter and mix in ¾ cup of sugar. Pour this mixture into the bottom of the prepared pan.
- Arrange the peach wedges on top of the butter-sugar mixture in the pan.
- In a bowl, beat the remaining sugar with eggs and mix in the bourbon, vanilla, and cinnamon.
- Gradually fold in the all-purpose flour and almond flour along with the baking powder until just combined.
- Pour the batter over the peaches in the pan.
- Bake for about 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cake cool for 10 minutes before inverting it onto a plate to serve.

Feel free to adjust the bourbon amount based on your preference. This cake is best served warm with a scoop of vanilla ice cream.
