- ½ pound ground breakfast sausage
- 2 tablespoons unsalted butter softened
- 6 large eggs beaten
- 8 slices sourdough bread
- 8 slices Colby-Jack cheese
Instructions
- In a skillet over medium heat, cook the ground breakfast sausage until browned and fully cooked, then set aside.
- In a bowl, beat the eggs and season with salt and pepper, then scramble them in the same skillet until cooked through.
- Spread 1 tablespoon of butter on one side of each slice of sourdough bread.
- In a skillet or griddle, place 4 slices of bread butter-side down and top each with 2 slices of Colby-Jack cheese.
- Layer the scrambled eggs and cooked sausage on top of the cheese, then add another 2 slices of cheese before placing the remaining bread slices on top, butter-side up.
- Grill the sandwiches for about 3-4 minutes on each side or until the bread is golden brown and the cheese has melted.
- Slice the sandwiches in half and serve warm.
