  • 1 Tablespoon olive oil or avocado oil
  • 1 lb homemade or store-bought turkey sausage
  • 8 whole eggs
  • 2 tablespoons water or milk
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 Tablespoon butter
  • 8 ounces shredded cheese
  • 3/4 cup drained and rinsed black beans
  • 1/4 cup pico de gallo or diced tomatoes
  • 12 medium avocados
  • 1/4 cup finely diced red onion
  • 1/4 cup finely chopped fresh chopped cilantro
  • Optional topping: jalapeño sour cream
  • sliced jalapeno
  • black olives
  • Mexican pickled onions
  • hot sauce
  • green onions
  • guacamole
  • or avocado crema

Instructions

  1. Preheat your oven to 400°F (200°C). Spread tortilla chips evenly on a baking sheet.
  2. In a skillet, heat olive oil over medium heat, then add turkey sausage and cook until browned and cooked through.
  3. In a bowl, whisk eggs with water or milk, salt, and pepper. Pour the mixture into the skillet and scramble until fully cooked.
  4. Melt butter in another skillet, then layer the cooked turkey sausage and scrambled eggs over the tortilla chips on the baking sheet.
  5. Sprinkle the shredded cheese and black beans on top, then bake for 10-12 minutes or until the cheese is melted.
  6. Top with pico de gallo, sliced avocados, red onion, and cilantro. Add any additional toppings as desired.
