Description

A delicious breakfast dish featuring baked sweet potatoes topped with eggs, bacon, and cheese.


Ingredients

  • 3 large sweet potatoes
  • for baking
  • ½ cup bacon
  • cooked and crumbled
  • 2 tablespoons unsalted butter
  • ¼ cup shredded white cheddar cheese
  • 6 large eggs
  • ¼ teaspoon black pepper
  • ½ teaspoon salt
  • scallion
  • minced (for topping)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Poke holes in the sweet potatoes and bake them for about 45 minutes or until tender.
  3. Once baked, let the sweet potatoes cool slightly, then slice them open and scoop out some flesh, leaving a small border.
  4. In a bowl, mix the scooped potato flesh with butter, bacon, cheese, black pepper, and salt.
  5. Fill the sweet potato skins with the mixture and make a small well in the center of each.
  6. Crack an egg into each well and return them to the oven for an additional 10-15 minutes until the eggs are set.
  7. Remove from the oven, top with minced scallions, and serve warm.

Notes

Feel free to add more toppings such as avocado or hot sauce for extra flavor.
