Ingredients

- 3 large sweet potatoes
- for baking
- ½ cup bacon
- cooked and crumbled
- 2 tablespoons unsalted butter
- ¼ cup shredded white cheddar cheese
- 6 large eggs
- ¼ teaspoon black pepper
- ½ teaspoon salt
- scallion
- minced (for topping)
Instructions
- Preheat the oven to 400°F (200°C).
- Poke holes in the sweet potatoes and bake them for about 45 minutes or until tender.
- Once baked, let the sweet potatoes cool slightly, then slice them open and scoop out some flesh, leaving a small border.
- In a bowl, mix the scooped potato flesh with butter, bacon, cheese, black pepper, and salt.
- Fill the sweet potato skins with the mixture and make a small well in the center of each.
- Crack an egg into each well and return them to the oven for an additional 10-15 minutes until the eggs are set.
- Remove from the oven, top with minced scallions, and serve warm.
Notes
Feel free to add more toppings such as avocado or hot sauce for extra flavor.
