  • 2 cups brown sugar

  • 2/3 cup heavy cream
  • 1 teaspoon vanilla
  • ice water
  • for an ice bath

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large mixing bowl, combine the yellow cake mix, Peach Jell-O, eggs, and oil. Mix until well blended.
  3. Gently fold in the frozen peaches until evenly distributed.
  4. Pour the batter into the prepared baking pan and spread it evenly.
  5. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  6. While the cake is baking, prepare the frosting by melting the butter in a saucepan over medium heat. Stir in the brown sugar and cook for 2 minutes.
  7. Slowly whisk in the heavy cream and bring the mixture to a boil. Remove from heat and stir in the vanilla.
  8. Set the saucepan in an ice bath to cool and thicken the frosting.
  9. Once the cake is completely cool, spread the brown sugar frosting over the top.

Notes

Make sure to cool the cake completely before adding the frosting to prevent it from melting. You can substitute fresh peaches if you prefer.
