  • 1 large egg
  • 3.5 oz sourdough discard
  • 4 tbsp heavy cream
  • 5.5 oz peaches
  • 2.5 tbsp butter
  • 1.5 tbsp brown sugar
  • 1.5 tbsp sugar
  • 1/3 cup flour
  • 1/4 tsp cinnamon
  • 1 pinch salt
  • 1 cup powdered sugar
  • 1.5 tbsp milk
  • 1 tsp fresh lemon juice
  • 1 dash vanilla

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. In a separate bowl, mix the vanilla, egg, sourdough discard, and heavy cream.
  5. Add the wet ingredients to the dry ingredients and stir until just combined.
  6. Fold in the diced peaches gently.
  7. Transfer the dough to the prepared baking sheet and shape it into a circle about 1-inch thick.
  8. Cut into wedges and brush the tops with additional heavy cream.
  9. In a small bowl, combine the topping ingredients and sprinkle over the scones.
  10. Bake for 25-30 minutes or until golden brown.
  11. Let cool slightly before drizzling with the glaze made from powdered sugar, milk, lemon juice, and vanilla.
