Description

Cajun Salmon Avocado Lime is a delicious and nutritious dish that combines the spicy, smoky flavors of Cajun-seasoned salmon with a creamy avocado lime crema. Perfect for a weeknight meal or a special occasion, this recipe is both healthy and satisfying.

Ingredients

Scale

2 (6-ounce) salmon fillets

skin on or off

2 tablespoons Cajun seasoning (store-bought or homemade)

1 tablespoon olive oil

1 tablespoon lemon juice

1 teaspoon garlic powder

1/2 teaspoon smoked paprika

Salt and freshly ground black pepper

to taste

2 ripe avocados

1/4 cup sour cream (or Greek yogurt for a healthier option)

1/4 cup fresh lime juice (from about 2 limes)

2 tablespoons chopped cilantro

1 clove garlic

minced

1/4 teaspoon salt

or to taste

1/8 teaspoon cayenne pepper (optional

for a little kick)

23 tablespoons water

to thin to desired consistency

Instructions

  • Preheat your oven to 400°F (200°C).
  • In a small bowl, mix together the Cajun seasoning, olive oil, lemon juice, garlic powder, smoked paprika, salt, and pepper to create a paste.
  • Rub the Cajun paste all over the salmon fillets.
  • Place the salmon fillets on a baking sheet lined with parchment paper and bake for 15-20 minutes, or until cooked through and flakes easily with a fork.
  • While the salmon is baking, prepare the avocado lime crema by blending the avocados, sour cream (or Greek yogurt), lime juice, cilantro, garlic, salt, and cayenne pepper in a food processor or blender. Add water as needed to reach desired consistency.
  • Once the salmon is done, remove it from the oven and let it rest for a few minutes.
  • Serve the salmon topped with the avocado lime crema and your choice of sides.

Notes
