This Cajun White Chicken Chili is a hearty and flavorful dish that combines tender chicken, spicy sausage, and beans in a creamy broth, perfect for warming up on chilly nights.

  • 3 tablespoons olive oil
  • 1 pound boneless skinless chicken breast cubed
  • 16 ounces andouille sausage sliced
  • 1 medium white onion diced
  • 4 medium celery ribs sliced
  • 1 medium green bell pepper diced
  • 1 medium jalapeno minced
  • 4 cloves minced garlic
  • 2 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1 teaspoon cayenne pepper
  • 3 tablespoons all-purpose flour
  • 4 cups chicken broth
  • 2 (15 ounce cans) great northern beans drained
  • 1/2 pound raw shrimp peeled deveined tails removed
  • 1/2 cup heavy cream

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the cubed chicken and cook until browned, about 5-7 minutes.
  2. Stir in the andouille sausage, onion, celery, green bell pepper, jalapeno, and garlic. Sauté until the vegetables are softened, about 5-6 minutes.
  3. Add the cumin, smoked paprika, chili powder, and cayenne pepper. Stir for another minute to release the spices’ flavors.
  4. Sprinkle in the flour and stir to combine, cooking for about 2 minutes.
  5. Gradually whisk in the chicken broth until smooth. Bring to a simmer.
  6. Add the drained great northern beans and shrimp. Cook for about 5-7 minutes until the shrimp are cooked through.
  7. Finally, stir in the heavy cream and cook for an additional 2-3 minutes. Season with salt and pepper to taste, then serve hot.

Notes

Feel free to adjust the spice levels according to your preference. For a thicker chili, let it simmer longer to reduce the liquid.
