Ingredients

  • 2 cups dry sushi rice or calrose rice
  • 5 Tbsp rice vinegar
  • divided
  • 2 Tbsp granulated sugar
  • 1/2 tsp salt
  • 1/4 cup light mayonnaise or regular mayonnaise
  • 1 1/2 Tbsp sriracha
  • 1/4 cup low-sodium soy sauce
  • 10 oz imitation crab or lump crabmeat
  • torn or chopped into small bite size pieces
  • 1 1/2 cups diced English cucumber
  • 3/4 cup roughly chopped matchstick carrots
  • 1 nori sheet
  • chopped or crumbled into small pieces (add more if you’d like)
  • 1 1/2 Tbsp chopped pickled sushi ginger
  • 1 large avocado
  • peeled and diced
  • Black and toasted sesame seeds
  • for garnish

Instructions

  1. Rinse the sushi rice under cold water until the water runs clear, then drain.
  2. In a pot, combine the rinsed rice and 3 cups of water. Bring to a boil, then reduce the heat to low, cover, and simmer for about 20 minutes until the rice is cooked.
  3. While the rice is cooking, in a small bowl, mix together 3 Tbsp rice vinegar, sugar, and salt until dissolved.
  4. Once the rice is cooked, remove it from heat and let it sit covered for 10 minutes. Then, add the vinegar mixture and fluff the rice with a fork.
  5. In a separate bowl, combine mayonnaise and sriracha to make the spicy mayo.
  6. To serve, divide the sushi rice among bowls. Top with crab, cucumber, carrots, nori, sushi ginger, and avocado.
  7. Drizzle with soy sauce and a generous amount of spicy mayo. Sprinkle with sesame seeds for garnish.

Notes

Feel free to customize your bowl with additional toppings like scallions or sesame oil for added flavor.
