- 1 ¼ cups packed brown sugar

- ½ cup apple juice
- 2 ½ cups all purpose-flour
- 1 large tart apple peeled and coarsely shredded
- ½ cup packed brown sugar for frosting
- 3 tablespoons butter for frosting
- 3 tablespoons apple juice for frosting
- 2 ⅔ cups powdered sugar for frosting
- ½ cup finely chopped pecans toasted for frosting
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large mixing bowl, cream together the softened butter and packed brown sugar until light and fluffy.
- Add the baking soda, apple pie spice, salt, egg, and apple juice to the mixture and beat until well combined.
- Gradually add the all-purpose flour, mixing until just combined, and then fold in the shredded apple.
- Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden. Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
- For the frosting, in a medium saucepan over medium heat, melt together ½ cup packed brown sugar, 3 tablespoons butter, and 3 tablespoons apple juice, stirring until smooth.
- Remove from heat and gradually stir in the powdered sugar until the frosting reaches your desired consistency, then fold in the toasted pecans.
- Spread the frosting generously over the cooled cookies and serve.
Notes
For an extra touch, consider adding a sprinkle of sea salt on top of the frosting before it sets.
