Ingredients

  • ½ cup apple juice
  • 2 ½ cups all purpose-flour
  • 1 large tart apple peeled and coarsely shredded
  • ½ cup packed brown sugar for frosting
  • 3 tablespoons butter for frosting
  • 3 tablespoons apple juice for frosting
  • 2 ⅔ cups powdered sugar for frosting
  • ½ cup finely chopped pecans toasted for frosting

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large mixing bowl, cream together the softened butter and packed brown sugar until light and fluffy.
  3. Add the baking soda, apple pie spice, salt, egg, and apple juice to the mixture and beat until well combined.
  4. Gradually add the all-purpose flour, mixing until just combined, and then fold in the shredded apple.
  5. Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  6. Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden. Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
  7. For the frosting, in a medium saucepan over medium heat, melt together ½ cup packed brown sugar, 3 tablespoons butter, and 3 tablespoons apple juice, stirring until smooth.
  8. Remove from heat and gradually stir in the powdered sugar until the frosting reaches your desired consistency, then fold in the toasted pecans.
  9. Spread the frosting generously over the cooled cookies and serve.

Notes

For an extra touch, consider adding a sprinkle of sea salt on top of the frosting before it sets.
