Description

  • 1 1/2 tsp baking powder

  • 1/4 tsp salt
  • 1/4 cup (56g) unsalted butter

  • 1/4 cup (60ml) vegetable oil
  • 1/4 cup (52g) sugar
  • 1/2 cup (112g) packed brown sugar
  • 3/4 tsp vanilla extract
  • 3 tbsp (43g) sour cream
  • 2 large eggs
  • 3/4 cup (180ml) milk
  • 1 cup finely chopped apple
  • 1 1/4 cups (280g) unsalted butter
  • room temperature
  • 5 cups (575g) powdered sugar
  • 46 tbsp caramel sauce
  • pinch of ground cinnamon
  • additional caramel sauce
  • for drizzling
  • apple slices
  • for decorating

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake tin with liners.
  2. In a bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt. Set aside.
  3. In another large bowl, cream the butter, vegetable oil, sugar, and brown sugar until light and fluffy.
  4. Add in the vanilla extract and sour cream, mixing until combined.
  5. Beat in the eggs, one at a time, followed by the milk.
  6. Gradually add the dry ingredients, mixing until just combined, then fold in the chopped apples.
  7. Divide the batter among the cupcake liners and bake for 20-25 minutes or until a toothpick comes out clean.
  8. Allow the cupcakes to cool completely before frosting.
  9. For the caramel buttercream, beat the butter until creamy, then gradually add the powdered sugar and mix well.
  10. Mix in 4-6 tablespoons of caramel sauce and a pinch of cinnamon until smooth.
  11. Frost the cooled cupcakes with the caramel buttercream, drizzle with additional caramel sauce, and garnish with apple slices.

Notes

For a stronger apple flavor, consider adding more chopped apples or using apple cider in place of some of the milk.
