- 100 g sourdough starter

- 500 g bread flour
- 12 g sea salt

- 2 tablespoons butter

Instructions
- In a large bowl, combine the water and sourdough starter, mixing well.
- Add the bread flour and sea salt, and knead the dough until smooth and elastic.
- Cover the dough and let it rise for about 4 hours at room temperature, or until doubled in size.
- While the dough is rising, caramelize the onion by melting the butter in a skillet and cooking the sliced onion over low heat until golden brown.
- Once the dough has risen, gently deflate it and fold in the caramelized onions and shredded Gouda.
- Shape the dough into a ball and place it in a floured proofing basket. Cover and let it rise for an additional hour.
- Preheat your oven to 450°F (232°C) with a Dutch oven inside.
- Carefully transfer the dough to the preheated Dutch oven and bake for 30 minutes with the lid on, then remove the lid and bake for an additional 10 minutes until golden brown.
- Remove from the oven and let cool on a wire rack before slicing.
Notes
For best results, ensure your sourdough starter is active and bubbly before using. This bread can be enjoyed fresh or toasted.
