Ingredients
2 cups white sugar
1 ¼ cups vegetable oil
4 large eggs
2 teaspoons vanilla extract
2 cups all-purpose flour

3 cups grated carrots

4 cups confectioners’ sugar

Instructions
- Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
- In a large bowl, mix together white sugar and vegetable oil until well combined.
- Add eggs, one at a time, beating well after each addition, then stir in vanilla extract.
- In another bowl, combine flour, baking soda, baking powder, ground cinnamon, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Fold in grated carrots and optional chopped pecans.
- Divide the batter evenly between the prepared pans and bake for 25-30 minutes, or until a toothpick inserted comes out clean.
- Let the cakes cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.
- To make the frosting, beat together softened butter and cream cheese until smooth, then gradually add confectioners’ sugar and vanilla extract until well combined.
- Once the cakes are completely cool, spread frosting on top of one layer, place the second layer on top and frost the top and sides.
