4 large eggs

8 ounces cream cheese softened

4 cups confectioners’ sugar

1 teaspoon vanilla extract

Instructions

  • Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  • In a large bowl, mix together white sugar and vegetable oil until well combined.
  • Add eggs, one at a time, beating well after each addition, then stir in vanilla extract.
  • In another bowl, combine flour, baking soda, baking powder, ground cinnamon, and salt.
  • Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  • Fold in grated carrots and optional chopped pecans.
  • Divide the batter evenly between the prepared pans and bake for 25-30 minutes, or until a toothpick inserted comes out clean.
  • Let the cakes cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.
  • To make the frosting, beat together softened butter and cream cheese until smooth, then gradually add confectioners’ sugar and vanilla extract until well combined.
  • Once the cakes are completely cool, spread frosting on top of one layer, place the second layer on top and frost the top and sides.
