- 4 cups water
- 1 cup steel-cut oats
- 1 apple peeled
- cored
- and chopped
- ½ cup shredded carrot
- ½ cup raisins
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ½ teaspoon ground ginger
- 1 pinch salt
- 1 tablespoon unsalted butter
- ¾ cup chopped pecans
- 1 tablespoon brown sugar
- ½ cup plain yogurt
Instructions
- In a large pot, bring 4 cups of water to a boil.
- Stir in the steel-cut oats and cook for about 20 minutes over medium heat, stirring occasionally.
- Add the chopped apple, shredded carrot, raisins, ground cinnamon, nutmeg, ginger, and a pinch of salt. Continue to cook for another 10 minutes until the oats are creamy and the ingredients are well combined.
- Stir in the unsalted butter and chopped pecans. Sweeten with brown sugar to taste.
- Serve warm, topped with a dollop of plain yogurt.
Notes
For added sweetness, feel free to include more brown sugar or your favorite sweetener. You can also substitute nuts based on your preference.
