Ingredients

  • 4 cups water
  • 1 cup steel-cut oats
  • 1 apple peeled
  • cored
  • and chopped
  • ½ cup shredded carrot
  • ½ cup raisins
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground ginger
  • 1 pinch salt
  • 1 tablespoon unsalted butter
  • ¾ cup chopped pecans
  • 1 tablespoon brown sugar
  • ½ cup plain yogurt

Instructions

  1. In a large pot, bring 4 cups of water to a boil.
  2. Stir in the steel-cut oats and cook for about 20 minutes over medium heat, stirring occasionally.
  3. Add the chopped apple, shredded carrot, raisins, ground cinnamon, nutmeg, ginger, and a pinch of salt. Continue to cook for another 10 minutes until the oats are creamy and the ingredients are well combined.
  4. Stir in the unsalted butter and chopped pecans. Sweeten with brown sugar to taste.
  5. Serve warm, topped with a dollop of plain yogurt.

Notes

For added sweetness, feel free to include more brown sugar or your favorite sweetener. You can also substitute nuts based on your preference.
