- 2 cups white sugar
- 1 ¼ cups vegetable oil
- 4 large eggs
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 2 teaspoons baking soda
- 2 teaspoons baking powder

- 3 cups grated carrots
- 1 cup chopped pecans (Optional)
- 4 cups confectioners’ sugar
- 8 ounces cream cheese

Instructions
- Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
- In a large mixing bowl, beat together the white sugar and vegetable oil until well combined.
- Add in the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- In another bowl, whisk together the flour, baking soda, baking powder, ground cinnamon, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Fold in the grated carrots and chopped pecans (if using).
- Divide the batter evenly between the prepared pans and smooth the tops.
- Bake for 30 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cakes cool in the pans for 10 minutes before transferring to wire racks to cool completely.
- To make the frosting, beat together the softened cream cheese, butter, vanilla extract, and confectioners’ sugar until smooth and creamy.
- Once the cakes are cool, spread a layer of frosting on top of one cake, place the second cake on top, and frost the top and sides of the cake.
- Garnish with additional chopped pecans if desired.
Notes
For best results, use freshly grated carrots. You can also add crushed pineapple for extra moisture and flavor.
