Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan or line it with parchment paper.
- In a large mixing bowl, cream together the melted butter, granulated sugar, and brown sugar until well combined.
- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract and pineapple Greek yogurt.
- Gently fold in the mashed bananas, grated carrots, crushed pineapple, raisins, and walnuts (if using).
- In a separate bowl, whisk together the flour, instant vanilla pudding mix (if using), cinnamon, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing just until combined; do not overmix.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake in the preheated oven for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

For an added twist, consider adding spices like nutmeg or ginger, or replace walnuts with pecans based on preference.
