  • 1/3 cup diced walnuts

  • 2 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoons salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan or line it with parchment paper.
  2. In a large mixing bowl, cream together the melted butter, granulated sugar, and brown sugar until well combined.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract and pineapple Greek yogurt.
  4. Gently fold in the mashed bananas, grated carrots, crushed pineapple, raisins, and walnuts (if using).
  5. In a separate bowl, whisk together the flour, instant vanilla pudding mix (if using), cinnamon, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing just until combined; do not overmix.
  7. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  8. Bake in the preheated oven for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  9. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
