Ingredients

  • 1 can evaporated milk
  • 1 cup coconut milk
  • 500 grams (about 2½ cups) flour
  • ½ cup sugar
  • 3 large whole eggs
  • 3 tablespoons margarine
  • 1 cup coconut milk
  • 2 tablespoons sugar
  • 1 cup shredded coconut

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking pan.
  2. In a mixing bowl, combine the condensed milk, evaporated milk, and coconut milk.
  3. Add the flour, sugar, eggs, and margarine to the milk mixture and mix until smooth.
  4. Pour the batter into the prepared baking pan and bake for about 30 minutes or until a toothpick comes out clean.
  5. While the cake is baking, prepare the icing by combining coconut milk and sugar in a saucepan over medium heat until the sugar dissolves.
  6. Remove from heat, stir in shredded coconut, and set aside to cool.
  7. Once the cake is baked and cooled, spread the coconut icing over the top.
