- 1.5 pounds Lean Ground Beef
- 1 Red Bell Pepper
- seeded and chopped
- 1 Yellow Onion
- chopped
- 1 ounce Taco Seasoning Mix
- 2 ½ cups Biscuit Mix
- like Bisquick
- 1 cup Water
- Cooking Spray
- like Pam
- ½ cup Sour Cream
- ½ cup Mayonnaise
- 4 ounces Diced Green Chiles
- drained
- 1 ½ cups Cheddar Cheese
- Fiesta Blend
- shredded
- divided
- 1 teaspoon Garlic Powder
- ½ cup Salsa
- mild
Instructions
- Preheat the oven to 350°F (175°C) and spray a 9×13 inch baking dish with cooking spray.
- In a large skillet over medium heat, brown the lean ground beef, onion, and red bell pepper until the meat is fully cooked and the vegetables are softened.
- Stir in the taco seasoning mix, garlic powder, and drained green chiles; mix well and remove from heat.
- In a separate bowl, combine the biscuit mix and water to form a batter.
- Pour the meat mixture into the prepared baking dish, then spread the biscuit batter on top.
- Bake for 20-25 minutes or until the biscuit topping is golden brown.
- Remove from the oven and spread the sour cream and mayonnaise mixture on top, then sprinkle with shredded cheese.
- Return to the oven for an additional 5-10 minutes, until the cheese is melted and bubbly. Serve warm with salsa on the side.
