Description
This Cauliflower Fried ‘Rice’ is a delightful, low-carb twist on the traditional dish, featuring tender pork loin and vibrant vegetables.
Ingredients

- 2 cups frozen peas
- ½ cup water
- ¼ cup sesame oil
- divided
- 4 cups cubed pork loin
- 6 green onions
- sliced
- 1 large carrot
- cubed
- 2 cloves garlic
- minced
- 20 ounces shredded cauliflower
- 6 tablespoons soy sauce
- 2 eggs
- beaten
Instructions
- In a large skillet, heat 2 tablespoons of sesame oil over medium-high heat.
- Add the cubed pork loin and cook until browned and fully cooked, about 8-10 minutes.
- Remove the pork from the skillet and set aside.
- In the same skillet, add the remaining sesame oil and garlic, sauté for 1 minute.
- Add the cubed carrot and peas, and cook for 5 minutes until tender.
- Stir in the shredded cauliflower and water, cooking until the cauliflower is tender, about 5-7 minutes.
- Pour in the soy sauce, and mix well.
- Push the mixture to one side of the skillet and add the beaten eggs, scrambling until cooked.
- Combine the eggs with the cauliflower mixture and add the cooked pork loin back in, mixing until well combined.
- Garnish with sliced green onions and serve hot.
Notes
For added flavor, consider adding a splash of rice vinegar or some chopped bell peppers.
