Description

This Cauliflower Fried ‘Rice’ is a delightful, low-carb twist on the traditional dish, featuring tender pork loin and vibrant vegetables.


Ingredients

  • 2 cups frozen peas
  • ½ cup water
  • ¼ cup sesame oil
  • divided
  • 4 cups cubed pork loin
  • 6 green onions
  • sliced
  • 1 large carrot
  • cubed
  • 2 cloves garlic
  • minced
  • 20 ounces shredded cauliflower
  • 6 tablespoons soy sauce
  • 2 eggs
  • beaten

Instructions

  1. In a large skillet, heat 2 tablespoons of sesame oil over medium-high heat.
  2. Add the cubed pork loin and cook until browned and fully cooked, about 8-10 minutes.
  3. Remove the pork from the skillet and set aside.
  4. In the same skillet, add the remaining sesame oil and garlic, sauté for 1 minute.
  5. Add the cubed carrot and peas, and cook for 5 minutes until tender.
  6. Stir in the shredded cauliflower and water, cooking until the cauliflower is tender, about 5-7 minutes.
  7. Pour in the soy sauce, and mix well.
  8. Push the mixture to one side of the skillet and add the beaten eggs, scrambling until cooked.
  9. Combine the eggs with the cauliflower mixture and add the cooked pork loin back in, mixing until well combined.
  10. Garnish with sliced green onions and serve hot.

Notes

For added flavor, consider adding a splash of rice vinegar or some chopped bell peppers.
