Description

This Chai Sourdough Bread combines the warm spices of chai latte with the tangy flavors of sourdough, resulting in a unique and aromatic bread perfect for any occasion.

  • 450 g bread flour
  • unbleached
  • 10 g coarse sea salt

  • 1 tablespoon dutch process cocoa powder

Instructions

  1. In a large bowl, combine the cooled chai latte and active sourdough starter.
  2. Add the ground spices (cinnamon, cardamom, ginger, cloves, all spice, nutmeg), bread flour, coarse sea salt, and cocoa powder to the mixture.
  3. Mix until a rough dough forms, then knead on a floured surface for about 8-10 minutes until smooth and elastic.
  4. Place the dough in a lightly greased bowl, cover, and let it rest at room temperature for 4-6 hours or until doubled in size.
  5. Preheat your oven to 450°F (232°C) and place a Dutch oven inside to heat up.
  6. Once the dough has risen, gently shape it into a round loaf and let it proof for an additional 30 minutes.
  7. Carefully transfer the dough to the hot Dutch oven, cover with the lid, and bake for 30 minutes.
  8. Remove the lid and bake for an additional 10-15 minutes, or until the bread is deep golden brown.
  9. Allow the bread to cool on a wire rack before slicing and serving.

Notes

For best flavor, use a quality chai latte and ensure your sourdough starter is active. This bread pairs beautifully with butter or cream cheese.
