  • 1 lb ground beef lean and cooked
  • 1 cup onion diced and sautéed
  • 2 cups shredded cheese cheddar or Monterey Jack
  • 8 pieces corn tortillas warmed
  • 1 can diced green chiles drained
  • 1 can cream of chicken soup or use a homemade version
  • 1 cup sour cream or Greek yogurt for a lighter version
  • 1 clove garlic minced
  • 1 teaspoon cumin ground
  • 1 teaspoon chili powder optional
  • Salt & pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the cooked ground beef, sautéed onions, green chiles, garlic, cumin, chili powder, salt, and pepper.
  3. Spread a thin layer of cream of chicken soup in the bottom of a baking dish.
  4. Fill each warmed tortilla with the beef mixture and a sprinkle of cheese, then roll them up and place seam-side down in the baking dish.
  5. Pour the remaining cream of chicken soup mixed with sour cream over the tortillas, then top with the remaining cheese.
  6. Cover with foil and bake for 20 minutes, then remove the foil and bake for an additional 10 minutes until bubbly and golden.
