- 1 lb ground beef lean and cooked
- 1 cup onion diced and sautéed
- 2 cups shredded cheese cheddar or Monterey Jack
- 8 pieces corn tortillas warmed
- 1 can diced green chiles drained
- 1 can cream of chicken soup or use a homemade version
- 1 cup sour cream or Greek yogurt for a lighter version
- 1 clove garlic minced
- 1 teaspoon cumin ground
- 1 teaspoon chili powder optional
- Salt & pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine the cooked ground beef, sautéed onions, green chiles, garlic, cumin, chili powder, salt, and pepper.
- Spread a thin layer of cream of chicken soup in the bottom of a baking dish.
- Fill each warmed tortilla with the beef mixture and a sprinkle of cheese, then roll them up and place seam-side down in the baking dish.
- Pour the remaining cream of chicken soup mixed with sour cream over the tortillas, then top with the remaining cheese.
- Cover with foil and bake for 20 minutes, then remove the foil and bake for an additional 10 minutes until bubbly and golden.
