- 1 pound chicken breasts cut into 1×1-inch cubes
- 1 small onion finely chopped
- 2 cloves garlic minced
- 1 ½ cups white long grain rice rinsed
- 2 cups chicken stock
- 2 cups water
- 3 cups broccoli florets roughly chopped
- ½ cup milk
- 2 cups sharp cheddar cheese shredded

Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, sauté the onions and garlic until fragrant.
- Add the cubed chicken to the skillet and cook until browned.
- Stir in the rice, chicken stock, and water; bring to a simmer.
- Fold in the broccoli; cover and let cook for about 10 minutes to soften the broccoli.
- Remove from heat and stir in milk and half of the cheddar cheese.
- Transfer the mixture to a greased baking dish and top with remaining cheddar cheese.
- Bake for 25-30 minutes, or until cheese is bubbly and golden.
- Let it cool for a few minutes before serving.
