  • finely diced
  • 1 cup cheddar cheese
  • grated
  • 1 cup (245g) buttermilk
  • cold
  • 2 tablespoons butter (topping)
  • 1/2 teaspoon sea or kosher salt (topping)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the flour, baking powder, baking soda, and salt.
  3. Grate the frozen butter into the flour mixture and stir until the mixture resembles coarse crumbs.
  4. Fold in the garlic scapes, scallions, and cheddar cheese until evenly distributed.
  5. Pour in the cold buttermilk and mix gently until just combined; do not overwork the dough.
  6. Turn the dough out onto a floured surface and pat it into a 1-inch thick rectangle.
  7. Cut the dough into squares and place them on the prepared baking sheet.
  8. For the topping, melt the 2 tablespoons of butter and mix in the sea or kosher salt; brush this mixture over the tops of the biscuits.
