- 1 cup (245g) buttermilk
- cold
- 2 tablespoons butter (topping)
- 1/2 teaspoon sea or kosher salt (topping)
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the flour, baking powder, baking soda, and salt.
- Grate the frozen butter into the flour mixture and stir until the mixture resembles coarse crumbs.
- Fold in the garlic scapes, scallions, and cheddar cheese until evenly distributed.
- Pour in the cold buttermilk and mix gently until just combined; do not overwork the dough.
- Turn the dough out onto a floured surface and pat it into a 1-inch thick rectangle.
- Cut the dough into squares and place them on the prepared baking sheet.
- For the topping, melt the 2 tablespoons of butter and mix in the sea or kosher salt; brush this mixture over the tops of the biscuits.
- Bake in the preheated oven for 20-25 minutes or until golden brown.
- Let cool for a few minutes before serving warm.
