  • 55 g all-purpose or bread flour
  • 55 g water

Dough

  • 100 g ripe levain
  • 425 g water
  • 13 g salt
  • 500 g bread flour

Cheese Mixture

  • 150 g mozzarella cheese, shredded
  • 70 g parmesan cheese, shredded
  • 100 g sharp cheddar cheese, shredded
  • 100 g Monterey Jack cheese, shredded
  • 1 tbsp dried oregano
  • 1 tbsp dried basil

Garlic Herb Oil

  • 55 g olive oil
  • 35 g unsalted butter, melted
  • 1 tsp garlic powder
  • 1/4 tsp salt
  • 1 tsp dried oregano
  • 1 tsp dried basil

Topping

  • 2 cloves garlic, minced

Instructions

  1. Prepare Levain
    Mix sourdough starter, flour, and water. Cover and let ferment 10–12 hours until bubbly.
  2. Mix Dough
    Combine levain, water, and salt. Gradually add flour and mix until a sticky dough forms.
  3. Bulk Fermentation
    Cover and let rise for 3–4 hours (or until doubled), performing stretch-and-folds every 30 minutes for the first 2 hours.
  4. Prepare Cheese Mixture
    In a bowl, combine all shredded cheeses with oregano and basil.
  5. Make Garlic Herb Oil
    Mix olive oil, melted butter, garlic powder, salt, and herbs.
  6. Shape Dough
    Transfer dough to a well-oiled baking pan. Gently stretch to fit. Let rest for 30–45 minutes.
  7. Dimple & Top
    Use your fingers to dimple the dough. Drizzle garlic herb oil over the surface. Add cheese mixture and minced garlic evenly.
  8. Bake
    Bake at 220Β°C (425Β°F) for 20–25 minutes until golden brown and bubbly.
  9. Cool & Serve
