- 1 tablespoon olive oil
- 1 medium onion chopped
- 2 cloves garlic minced
- 3 medium potatoes peeled and diced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1/2 teaspoon dried oregano
- 1 cup shredded cheddar cheese
- 1/2 cup beef broth
- 1 tablespoon fresh parsley chopped
Instructions
- In a large skillet, heat olive oil over medium heat and sauté the chopped onion and minced garlic until softened.
- Add ground beef to the skillet, cooking until browned. Drain excess fat.
- Stir in the diced potatoes, salt, black pepper, paprika, and oregano. Mix well.
- Pour in the beef broth and bring to a simmer. Cover and cook for about 20 minutes, or until potatoes are tender.
- Once the potatoes are cooked, sprinkle shredded cheddar cheese over the top, cover, and allow cheese to melt for about 5 minutes.
- Garnish with fresh parsley before serving.
Notes
