- 1 (10.5 ounce) can cream of mushroom soup
- 1 (14.5 ounce) can diced tomatoes with juice
- ½ cup long grain white rice
- ¾ cup shredded mozzarella cheese
- salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, brown the ground beef over medium heat until fully cooked. Drain excess fat.
- Stir in the cream of mushroom soup, diced tomatoes (with juice), long grain white rice, and season with salt and pepper.
- Transfer the mixture to a greased casserole dish and spread it evenly.
- Cover with aluminum foil and bake for 30 minutes.
- Remove the foil, sprinkle mozzarella cheese on top, and return it to the oven for an additional 5-10 minutes, until the cheese is melted and bubbly.
- Let it cool for a few minutes before serving.
Notes
For added flavor, consider mixing in some chopped onions or bell peppers with the ground beef. This casserole also reheats well, making it perfect for leftovers.
