Description

A comforting, cheesy casserole made with tender sliced potatoes, smoky kielbasa, onions, garlic, and melted cheddar cheese. This hearty family-friendly dish is easy to assemble and bakes until golden and bubbling.

  • 2 lb russet potatoes, peeled and thinly sliced
  • 1 lb kielbasa sausage, sliced into rounds or half-moons
  • 2 cups shredded sharp cheddar cheese
  • 1 small onion, thinly sliced or diced
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp garlic powder
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ cup heavy cream or sour cream, optional
  • 1 tbsp butter or oil, for greasing
  • 2 tbsp chopped fresh chives or parsley, optional

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a 9×13-inch baking dish with butter or oil.
  2. Peel and slice the potatoes into thin, even rounds. For faster cooking, optionally parboil them briefly and drain well.
  3. Slice the kielbasa into rounds or half-moons. For extra flavor, optionally sear it in a skillet until lightly browned.
  4. Arrange a layer of potatoes in the prepared baking dish. Season lightly with salt, pepper, paprika, and garlic powder.
  5. Add some onion, garlic, sliced kielbasa, and shredded cheddar cheese.
  6. Repeat the layers until all the ingredients are used, finishing with a generous layer of cheese on top. If using cream or sour cream, add it between the layers.
  7. Cover the dish with foil and bake for 45–60 minutes, or until the potatoes are tender.
  8. Remove the foil and bake for another 5–10 minutes, until the cheese is golden and bubbling. For a more browned top, broil briefly while watching carefully.
  9. Let the casserole rest for about 10 minutes before serving. Garnish with fresh chives or parsley if desired.

Notes

  • Slice the potatoes evenly so they cook at the same rate.
  • Sharp cheddar provides the strongest flavor; mozzarella or gouda can be combined with cheddar for extra meltiness.
  • Smoked paprika works especially well with kielbasa.
  • Leftovers can be refrigerated for 3–4 days or frozen for up to 2–3 months.
  • To reheat, cover with foil and warm at 350°F (175°C) for 15–20 minutes, or microwave individual portions.
