Ingredients
- Fresh medium zucchinis
- Large eggs
- Shredded low-moisture mozzarella
- Freshly grated Parmesan cheese
- Garlic powder
- Italian seasoning
- Salt
- Pepper
Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Finely shred the zucchinis using a grater, then place them in a clean kitchen towel or cheesecloth and squeeze out as much moisture as possible.
- In a mixing bowl, combine the drained zucchini with the eggs, mozzarella cheese, Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper until well mixed.
- Spread the zucchini mixture onto the prepared baking sheet, forming a rectangle about 1/2 inch thick.
- Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown.
- Remove from the oven, let cool for a few minutes, then slice into sticks.
- Serve warm, optionally topped with extra cheese or marinara sauce for dipping.
Notes
Ensure to drain the zucchini thoroughly to prevent soggy breadsticks. You can also experiment with different cheeses for added flavor.
