- 3 medium zucchini – (or 2 zucchini and 1 yellow squash)
- grated
- 2/3 cup panko breadcrumbs
- 1/2 cup sharp cheddar cheese – finely grated
- 2 eggs
- 1 tsp cornstarch
- 3/4 tsp kosher sea salt
- 1/2 teaspoon garlic powder
- 1/4 tsp onion powder
- 1/4 tsp ground black pepper
- 1/8 tsp dried parsley
- 1/8 tsp paprika
- avocado oil – OR grape seed oil OR pam
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, mix together the grated zucchini, panko breadcrumbs, cheddar cheese, eggs, cornstarch, salt, garlic powder, onion powder, black pepper, parsley, and paprika until well combined.
- Scoop out tablespoon-sized portions of the mixture and form them into small tots.
- Arrange the tots on the prepared baking sheet and lightly spray or brush them with avocado oil.
- Bake in the preheated oven for 25-30 minutes, or until golden brown and crispy, flipping halfway through.
- Remove from oven and let cool slightly before serving.
Notes
For extra crispiness, make sure to squeeze out as much moisture from the grated zucchini as possible before mixing. Serve these tasty tots with your favorite dipping sauce!
