Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 2 teaspoons baking powder
  • ½ teaspoon ground ginger
  • 2 teaspoons ground cinnamon
  • 2 cups white sugar
  • 4 large eggs
  • ¼ cup unsalted butter
  • 1 cup coconut oil
  • 2 cups finely grated carrots
  • 1 (8 ounce) can finely crushed pineapple

  • ½ cup finely chopped pecans
  • ½ cup finely chopped walnuts
  • 1 (8 ounce) package cream cheese
  • softened
  • ¼ cup unsalted butter
  • softened
  • 1 ½ teaspoons vanilla extract
  • 3 cups confectioners’ sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  2. In a large bowl, whisk together the flour, salt, baking soda, baking powder, ground ginger, and ground cinnamon.
  3. In another bowl, cream together the white sugar, eggs, butter, and coconut oil until smooth.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. Fold in the grated carrots, crushed pineapple, and optional nuts (pecans and walnuts) until evenly distributed.
  6. Pour the batter evenly into the prepared cake pans and bake for 30-35 minutes or until a toothpick inserted comes out clean.
  7. Let the cakes cool in the pans for 10 minutes before transferring to wire racks to cool completely.
  8. For the frosting, beat together the softened cream cheese, butter, and vanilla extract until smooth and creamy.
  9. Gradually add the confectioners’ sugar until you reach your desired sweetness and consistency.
  10. Once the cakes are completely cool, frost the top of one layer and place the second layer on top, then frost the top and sides of the entire cake.
