- 2 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 2 teaspoons baking powder
- ½ teaspoon ground ginger
- 2 teaspoons ground cinnamon
- 2 cups white sugar
- 4 large eggs
- ¼ cup unsalted butter
- 1 cup coconut oil
- 2 cups finely grated carrots
- 1 (8 ounce) can finely crushed pineapple

- ½ cup finely chopped walnuts
- 1 (8 ounce) package cream cheese

- 3 cups confectioners’ sugar
Instructions
- Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
- In a large bowl, whisk together the flour, salt, baking soda, baking powder, ground ginger, and ground cinnamon.
- In another bowl, cream together the white sugar, eggs, butter, and coconut oil until smooth.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in the grated carrots, crushed pineapple, and optional nuts (pecans and walnuts) until evenly distributed.
- Pour the batter evenly into the prepared cake pans and bake for 30-35 minutes or until a toothpick inserted comes out clean.
- Let the cakes cool in the pans for 10 minutes before transferring to wire racks to cool completely.
- For the frosting, beat together the softened cream cheese, butter, and vanilla extract until smooth and creamy.
- Gradually add the confectioners’ sugar until you reach your desired sweetness and consistency.
- Once the cakes are completely cool, frost the top of one layer and place the second layer on top, then frost the top and sides of the entire cake.
