- 1 1/2 cups Fresh sweet cherries
- pitted (or use canned cherries
- drained–about 1 can)
- 3 large eggs
- room temperature
- 1/2 cup all-purpose flour
- 1/2 cup granulated sugar
- plus 2 Tablespoons for topping
- 1 cup whole milk
- or half and half
- 1 1/2 teaspoons vanilla extract
- 1/2 teaspoon almond extract
- 1/4 teaspoon salt
- powdered sugar
- for dusting on top
Instructions
- Preheat your oven to 350°F (175°C) and grease a baking dish.
- In a bowl, whisk together the eggs, flour, sugar, milk, vanilla extract, almond extract, and salt until smooth.
- Pour half of the batter into the prepared baking dish and layer the cherries on top.
- Pour the remaining batter over the cherries.
- Bake for about 30 minutes or until the clafoutis is golden brown and set.
- Allow to cool slightly, then dust with powdered sugar before serving.
Notes
For best results, use fresh cherries when in season. You can substitute with other fruits like blueberries or peaches if desired.
