Ingredients

  • ½ cup (113 g) unsalted butter, melted
  • 1 cup (200 g) granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • ½ cup (120 g) sour cream, room temperature
  • ½ cup (120 ml) milk, room temperature
  • 2 cups fresh or frozen cherries, pitted and chopped
  • ¼ cup (50 g) coarse sugar for topping (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or lightly grease the cups.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a separate large bowl, whisk together the melted butter and sugar until combined.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Mix in the sour cream and milk until smooth.
  6. Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Avoid overmixing.
  7. Fold in the chopped cherries carefully to distribute them evenly throughout the batter.
  8. Divide the batter evenly among the muffin cups, filling each about ⅔ full.
  9. Sprinkle coarse sugar on top if desired.
  10. Bake for 20–25 minutes, or until a toothpick inserted into the center comes out clean.
  11. Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • Fresh cherries provide the best flavor, but frozen cherries work well too.
  • If using frozen cherries, do not thaw them completely before adding to the batter.
  • For extra flavor, add ½ teaspoon almond extract.
  • Toss cherries lightly in flour before folding into the batter to prevent sinking.
