- 2 cups (240 g) all-purpose flour
- 2 teaspoons baking powder
- ½ teaspoon salt
- ½ cup (113 g) unsalted butter, melted
- 1 cup (200 g) granulated sugar
- 2 large eggs, room temperature
- 1 teaspoon vanilla extract
- ½ cup (120 g) sour cream, room temperature
- ½ cup (120 ml) milk, room temperature
- 2 cups fresh or frozen cherries, pitted and chopped
- ¼ cup (50 g) coarse sugar for topping (optional)
Instructions
- Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or lightly grease the cups.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a separate large bowl, whisk together the melted butter and sugar until combined.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Mix in the sour cream and milk until smooth.
- Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Avoid overmixing.
- Fold in the chopped cherries carefully to distribute them evenly throughout the batter.
- Divide the batter evenly among the muffin cups, filling each about ⅔ full.
- Sprinkle coarse sugar on top if desired.
- Bake for 20–25 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- Fresh cherries provide the best flavor, but frozen cherries work well too.
- If using frozen cherries, do not thaw them completely before adding to the batter.
- For extra flavor, add ½ teaspoon almond extract.
- Toss cherries lightly in flour before folding into the batter to prevent sinking.
- Store muffins in an airtight container for up to 3 days at room temperature.
