Description

  • ¼ cup water
  • ⅔ cup (133g) sugar
  • ¼ cup (30g) cornstarch
  • 1 tablespoon (15ml) lemon juice

Instructions

  1. In a medium saucepan, combine the pitted cherries, water, and sugar. Cook over medium heat until the mixture starts to bubble.
  2. In a small bowl, mix the cornstarch with a few tablespoons of water to create a slurry. Add this to the cherry mixture along with the lemon juice and stir until thickened.
  3. Remove from heat and let it cool before using it in your favorite pie recipe.

Notes

Make sure to pit the cherries before cooking, and adjust the sugar based on personal sweetness preference.
