- 1 cup Light Brown Sugar (packed)

- 1 teaspoon Vanilla Extract
- 3 medium Apples (peeled and diced)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
- In a large bowl, combine the rolled oats, flour, baking powder, salt, cinnamon, and ground ginger. Mix well.
- In another bowl, whisk together the melted butter, brown sugar, granulated sugar, vegetable oil, applesauce, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and mix until fully combined.
- Fold in the diced apples gently until evenly distributed throughout the mixture.
- Spread the mixture evenly into the prepared baking dish, pressing down firmly.
- Bake in the preheated oven for 25-30 minutes, or until the edges are golden brown.
- Allow the bars to cool in the baking dish for at least 10 minutes before cutting into squares.
Notes
For a healthier twist, you can substitute half the brown sugar with mashed ripe bananas. Store leftovers in an airtight container in the fridge for up to a week.
