- 2/3 cup Libby’s Pumpkin Puree

- 1/2 cup + 2 tablespoons dark brown sugar

- 1 2/3 cup + 1 tablespoon all-purpose flour
- 1 1/2 teaspoons pumpkin spice
- 1 teaspoon baking soda
- 1 teaspoon cream of tartar
- 1/2 teaspoon fine sea salt
- 1/3 cup granulated sugar

- 1 teaspoon ground cinnamon

Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the unsalted butter, pumpkin puree, granulated sugar, and dark brown sugar until light and fluffy.
- Add the egg yolks and vanilla extract, mixing until fully incorporated.
- In a separate bowl, whisk together the all-purpose flour, pumpkin spice, baking soda, cream of tartar, and sea salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- In a small bowl, mix the granulated sugar and ground cinnamon for rolling the cookies.
- Scoop out dough balls and roll them in the cinnamon-sugar mixture before placing them on the prepared baking sheet.
- Bake for 10-12 minutes or until the edges are lightly golden. Let cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
For best results, measure the flour correctly by spooning it into the measuring cup and leveling it off with a knife. Do not pack the flour down.
