Ingredients

  • 3 cups (450g) Basmati rice Steamed and fluffy
  • 3 cups (450g) Chicken breast Cooked and shredded
  • 1 cup (150g) Carrots Diced and softened
  • 1 cup (150g) Green peas Sweet and fresh or frozen
  • 1.5 cups (170g) Mozzarella cheese Shredded

  • 1.5 cups (170g) Sharp cheddar cheese Shredded
  • 4 tbsp (60g) Butter Salted
  • 1/4 cup (30g) All-purpose flour
  • 2 cups (480ml) Heavy cream Or whole milk
  • 1/4 cup (10g) Fresh parsley Finely chopped for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cooked Basmati rice, shredded chicken, diced carrots, green peas, 1 cup of mozzarella cheese, and 1 cup of cheddar cheese.
  3. In a saucepan, melt the butter over medium heat, then stir in the flour and cook for about 1 minute.
  4. Gradually whisk in the heavy cream until smooth and thickened, about 3-5 minutes.
  5. Pour the sauce over the rice and chicken mixture, stirring until everything is well combined.
  6. Transfer the mixture to a greased baking dish and top with the remaining mozzarella and cheddar cheese.
  7. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
  8. Garnish with fresh parsley before serving.

Notes

Feel free to substitute with rotisserie chicken for quicker preparation. Adjust the vegetable quantities to your preference.
