- 3 cups (450g) Basmati rice Steamed and fluffy
- 3 cups (450g) Chicken breast Cooked and shredded
- 1 cup (150g) Carrots Diced and softened
- 1 cup (150g) Green peas Sweet and fresh or frozen
- 1.5 cups (170g) Mozzarella cheese Shredded

- 1.5 cups (170g) Sharp cheddar cheese Shredded
- 4 tbsp (60g) Butter Salted
- 1/4 cup (30g) All-purpose flour
- 2 cups (480ml) Heavy cream Or whole milk
- 1/4 cup (10g) Fresh parsley Finely chopped for garnish
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the cooked Basmati rice, shredded chicken, diced carrots, green peas, 1 cup of mozzarella cheese, and 1 cup of cheddar cheese.
- In a saucepan, melt the butter over medium heat, then stir in the flour and cook for about 1 minute.
- Gradually whisk in the heavy cream until smooth and thickened, about 3-5 minutes.
- Pour the sauce over the rice and chicken mixture, stirring until everything is well combined.
- Transfer the mixture to a greased baking dish and top with the remaining mozzarella and cheddar cheese.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
- Garnish with fresh parsley before serving.
Notes
Feel free to substitute with rotisserie chicken for quicker preparation. Adjust the vegetable quantities to your preference.
