- 1 pound Boneless Chicken Breasts or Thighs
- 2 Medium Sweet Potato peeled and diced
- 2 tablespoon Olive Oil
- 1 Small Red Onion
- 2 Garlic Cloves minced
- 1 tsp Smoked Paprika
- ½ tsp Cumin
- Salt and Pepper to taste
- Chili Flakes Optional
- Squeeze of Lemon Juice Optional
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the diced sweet potatoes, olive oil, minced garlic, smoked paprika, cumin, salt, and pepper. Toss to coat the sweet potatoes evenly.
- In a separate bowl, season the chicken breasts or thighs with salt, pepper, and chili flakes if using.
- In a baking dish, spread the seasoned sweet potatoes in an even layer and place the chicken on top.
- Add sliced red onion over the chicken and sweet potatoes.
- Bake in the preheated oven for 25-30 minutes or until the chicken reaches an internal temperature of 165°F (75°C) and the sweet potatoes are tender.
- Optional: Squeeze fresh lemon juice over the dish before serving for added brightness.
