  • 2 Medium Sweet Potato peeled and diced
  • 2 tablespoon Olive Oil
  • 1 Small Red Onion
  • 2 Garlic Cloves minced
  • 1 tsp Smoked Paprika
  • ½ tsp Cumin
  • Salt and Pepper to taste
  • Chili Flakes Optional
  • Squeeze of Lemon Juice Optional

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the diced sweet potatoes, olive oil, minced garlic, smoked paprika, cumin, salt, and pepper. Toss to coat the sweet potatoes evenly.
  3. In a separate bowl, season the chicken breasts or thighs with salt, pepper, and chili flakes if using.
  4. In a baking dish, spread the seasoned sweet potatoes in an even layer and place the chicken on top.
  5. Add sliced red onion over the chicken and sweet potatoes.
