- 1 large bell pepper diced
- 3 cloves garlic minced
- 3 cups low-sodium chicken broth
- 3 cups baby spinach
- 1/2 cup grated parmesan cheese plus more for serving

- 1/4 tsp black pepper
Instructions
- In a large skillet, heat the olive oil over medium heat and add the sliced chicken apple sausage. Cook until browned, about 5-7 minutes.
- Add the diced onion and bell pepper to the skillet, sautéing until the vegetables are softened, approximately 3-4 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
- Pour in the chicken broth and bring to a simmer. Add the pasta, salt, and pepper, then cover and cook according to pasta package instructions until tender.
- Once the pasta is cooked, stir in the baby spinach and grated parmesan cheese until incorporated. Cook for an additional 2 minutes until spinach wilts.
- Serve warm, garnished with additional parmesan cheese if desired.
Notes
Feel free to customize the vegetables based on your preference, and use whole grain pasta for a healthier option.
