Delicious Chicken Caesar Salad Sandwiches featuring crispy chicken cutlets, fresh romaine, and a homemade Caesar dressing, perfect for lunch or a light dinner.

- 2 tbsp mayonnaise
- 1 garlic clove
- minced
- 2 tsp fresh lemon juice
- 1/2 tsp Worcestershire sauce
- 1 tsp anchovy paste
- or 1 anchovy
- finely minced into a paste
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/4 cup oil
- 1/4 cup Parmesan cheese
- 2 romaine hearts
- shredded
- 2 cup panko breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- 2 eggs
- 1/3 cup flour
- 3 boneless
- skinless chicken breasts
- cut in half lengthwise and pounded to ½-inch thick cutlets
- 1 tsp salt
- 1/2 tsp pepper
- Oil
- for frying
- 6 sub buns
- sliced in half lengthwise
Instructions
- In a bowl, mix together mayonnaise, minced garlic, lemon juice, Worcestershire sauce, anchovy paste, salt, and pepper to make the Caesar dressing.
- In another bowl, combine panko breadcrumbs, grated Parmesan, and Italian seasoning.
- Dredge the chicken cutlets in flour, dip in beaten eggs, and coat with the breadcrumb mixture.
- Heat oil in a skillet over medium heat and fry the cutlets until golden brown and cooked through, about 3-4 minutes per side. Drain on paper towels.
- Slice the sub buns and spread a layer of the Caesar dressing on each half.
- Layer the fried chicken cutlets, shredded romaine, and additional Parmesan cheese on the buns.
- Close the sandwiches and serve immediately.
Notes
For extra flavor, consider adding sliced tomatoes or crispy bacon to the sandwiches.
