Ingredients

  • 1 garlic clove

  • 2 tsp fresh lemon juice
  • 1/2 tsp Worcestershire sauce
  • 1 tsp anchovy paste
  • or 1 anchovy
  • finely minced into a paste
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/4 cup oil
  • 1/4 cup Parmesan cheese
  • 2 romaine hearts
  • shredded
  • 2 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 2 eggs
  • 1/3 cup flour
  • 3 boneless
  • skinless chicken breasts
  • cut in half lengthwise and pounded to ½-inch thick cutlets
  • 1 tsp salt
  • 1/2 tsp pepper
  • Oil
  • for frying
  • 6 sub buns
  • sliced in half lengthwise

Instructions

  1. In a bowl, mix together mayonnaise, minced garlic, lemon juice, Worcestershire sauce, anchovy paste, salt, and pepper to make the Caesar dressing.
  2. In another bowl, combine panko breadcrumbs, grated Parmesan, and Italian seasoning.
  3. Dredge the chicken cutlets in flour, dip in beaten eggs, and coat with the breadcrumb mixture.
  4. Heat oil in a skillet over medium heat and fry the cutlets until golden brown and cooked through, about 3-4 minutes per side. Drain on paper towels.
  5. Slice the sub buns and spread a layer of the Caesar dressing on each half.
  6. Layer the fried chicken cutlets, shredded romaine, and additional Parmesan cheese on the buns.
  7. Close the sandwiches and serve immediately.

Notes

For extra flavor, consider adding sliced tomatoes or crispy bacon to the sandwiches.
