Description

Ingredients

  • 68 thin sliced chicken breasts
  • 2 cups flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp garlic powder
  • 1 1/2 cup buttermilk
  • 1 egg
  • 1 Tbs hot sauce
  • Oil for frying
  • 1/4 cup reserved oil from frying
  • 1/3 cup flour
  • 2 cup milk
  • Salt & pepper

Instructions

  1. In a large bowl, combine flour, baking powder, baking soda, salt, pepper, and garlic powder.
  2. In another bowl, whisk together buttermilk, egg, and hot sauce.
  3. Dip chicken breasts into the buttermilk mixture, then coat with the flour mixture.
  4. Heat oil in a large skillet over medium heat. Fry the chicken until golden brown and cooked through, about 5-7 minutes per side.
  5. Remove chicken and drain on paper towels.
  6. For the gravy, use 1/4 cup reserved oil from frying and whisk in 1/3 cup flour over medium heat until bubbly.
  7. Slowly add milk, stirring continuously until the gravy thickens. Season with salt and pepper.
  8. Serve chicken topped with gravy.

Notes

Make sure the oil is hot enough before frying for a crispy coating. Use buttermilk for extra tenderness in the chicken.
