Description

This hearty Chicken Gnocchi Soup is a comforting blend of tender chicken, soft gnocchi, and a medley of vegetables simmered in a creamy broth.


Ingredients

  • 4 tablespoons butter
  • 1 small yellow onion diced
  • 1 stick of celery diced
  • ½ cup carrots julienned
  • 3 garlic cloves minced
  • ¼ cup all-purpose flour
  • 2 cups half-and-half
  • 4 cups chicken broth
  • ½ teaspoon thyme
  • ½ teaspoon mustard powder
  • 1 lb. boneless skinless chicken breasts or 2 cups diced cooked chicken
  • Salt and pepper to taste
  • 16 oz. potato gnocchi
  • 1 cup fresh spinach roughly chopped
  • 1 pinch red pepper flakes optional

Instructions

  1. In a large pot, melt the butter over medium heat. Add the diced onion, celery, and carrots, cooking until the vegetables are tender, about 5 minutes.
  2. Stir in the minced garlic and cook for an additional minute until fragrant.
  3. Sprinkle the flour over the vegetable mixture, stirring to combine. Cook for another 1-2 minutes to eliminate the raw flour taste.
  4. Gradually pour in the half-and-half and chicken broth, stirring constantly until the mixture is smooth.
  5. Add the thyme, mustard powder, and season with salt and pepper. If using raw chicken, add it now and allow the soup to simmer for 15-20 minutes until the chicken is cooked through.
  6. If using cooked chicken, add it along with the gnocchi, and let everything simmer for 5-7 minutes until the gnocchi is tender.
  7. Stir in the chopped spinach and let it wilt for a couple of minutes.
  8. Taste and adjust the seasoning, adding red pepper flakes if desired for a kick.
  9. Serve warm and enjoy your Chicken Gnocchi Soup!

Notes

You can use store-bought rotisserie chicken for a quicker option. This soup also freezes well; just add spinach when reheating.
