Ingredients
- Baby bella mushrooms
- Butter
- Boneless skinless chicken breasts
- All purpose flour
- Chicken broth
- Marsala wine
- Salt
- Pepper
- Cornstarch
- Water
- Shredded mozzarella
- Shredded Parmesan
- Green onions
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, melt 2 tablespoons of butter over medium heat, then add the mushrooms and cook until softened.
- While mushrooms are cooking, lightly dredge each chicken breast in flour and season with salt and pepper.
- In the same skillet, push the mushrooms to the side and add the chicken breasts, cooking until golden brown on both sides.
- Pour in the Marsala wine and chicken broth, bringing to a simmer. Cook for a few minutes until slightly thickened.
- In a small bowl, mix cornstarch and water to create a slurry, then add to the skillet, stirring to thicken the sauce.
- Top each chicken breast with mozzarella and Parmesan cheese, then transfer the skillet to the preheated oven.
- Bake for 15-20 minutes, or until the cheese is melted and bubbly, and chicken is cooked through.
- Garnish with thinly sliced green onions before serving.
Notes
For best results, use a good quality Marsala wine that you enjoy drinking. Feel free to substitute with white button mushrooms if baby bellas aren’t available.
