Description

Chicken Lombardy is a scrumptious dish featuring tender chicken breasts, savory mushrooms, and a rich Marsala wine sauce topped with melted cheese, perfect for a family dinner.


Ingredients

  • Baby bella mushrooms
  • Butter
  • Boneless skinless chicken breasts
  • All purpose flour
  • Chicken broth
  • Marsala wine
  • Salt
  • Pepper
  • Cornstarch
  • Water
  • Shredded mozzarella
  • Shredded Parmesan
  • Green onions

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, melt 2 tablespoons of butter over medium heat, then add the mushrooms and cook until softened.
  3. While mushrooms are cooking, lightly dredge each chicken breast in flour and season with salt and pepper.
  4. In the same skillet, push the mushrooms to the side and add the chicken breasts, cooking until golden brown on both sides.
  5. Pour in the Marsala wine and chicken broth, bringing to a simmer. Cook for a few minutes until slightly thickened.
  6. In a small bowl, mix cornstarch and water to create a slurry, then add to the skillet, stirring to thicken the sauce.
  7. Top each chicken breast with mozzarella and Parmesan cheese, then transfer the skillet to the preheated oven.
  8. Bake for 15-20 minutes, or until the cheese is melted and bubbly, and chicken is cooked through.
  9. Garnish with thinly sliced green onions before serving.

Notes

For best results, use a good quality Marsala wine that you enjoy drinking. Feel free to substitute with white button mushrooms if baby bellas aren’t available.
