Description

Savory Chicken Marsala features tender chicken breasts sautéed to perfection and served with a rich mushroom and Marsala wine sauce.


Ingredients

  • 2 large Open Nature® Air Chilled Skinless Boneless Chicken Breasts
  • about 1.5 pounds
  • Salt and freshly ground pepper
  • to taste
  • 1/2 cup all-purpose flour
  • 2 tablespoons olive oil
  • plus more if needed
  • 3 tablespoons butter
  • divided
  • 10 ounces Cremini mushrooms
  • sliced
  • 1 large Shallot
  • finely chopped
  • 3 cloves garlic
  • minced
  • 1 cup dry Marsala wine
  • 1 cup O Organics® Chicken Broth
  • 1/2 cup heavy cream
  • 1/3 cup chopped parsley

Instructions

  1. Season the chicken breasts with salt and pepper on both sides and coat them lightly with flour.
  2. In a large skillet, heat 2 tablespoons of olive oil and 1 tablespoon of butter over medium heat. Add the chicken and cook until golden brown and cooked through, about 5-7 minutes per side. Remove from the skillet and set aside.
  3. In the same skillet, add the remaining butter and the sliced mushrooms. Sauté until they are browned and have released their moisture.
  4. Add the shallot and garlic to the mushrooms, cooking for an additional 2-3 minutes until soft and fragrant.
  5. Pour in the Marsala wine, scraping up any bits from the bottom of the pan. Let it simmer for about 3 minutes until slightly reduced.
  6. Stir in the chicken broth, heavy cream, and return the chicken to the skillet. Simmer for another 5-10 minutes until the sauce thickens slightly and the chicken is heated through.
  7. Garnish with chopped parsley before serving.

Notes

For an extra flavor boost, consider adding a splash of lemon juice to the sauce or serving it with a side of pasta.
