Description

Chicken Normandy, also known as French Apple Cider Chicken, is a delightful dish combining tender chicken thighs with the sweetness of apples and the depth of apple cider, making it a perfect comfort food.


Ingredients

  • 6 bone-in
  • skin-on chicken thighs
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons olive oil or butter
  • 1 medium onion thinly sliced
  • 2 cloves garlic minced
  • 1 apple cored and thinly sliced preferably a crisp variety like Granny Smith or Fuji
  • 1 cup dry French apple cider or substitute with apple juice and a splash of white wine
  • 1 cup chicken broth

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken thighs generously with salt and pepper.
  3. In a large oven-safe skillet, heat the olive oil or butter over medium-high heat.
  4. Add the chicken thighs, skin-side down, and sear until golden brown, about 5-7 minutes. Flip and brown the other side for another 5 minutes.
  5. Remove the chicken from the skillet and set aside.
  6. In the same skillet, add the sliced onion and garlic, cooking until the onion is translucent.
  7. Add the sliced apple and cook for an additional 2-3 minutes.
  8. Pour in the apple cider and chicken broth, stirring to combine and scraping up any browned bits from the bottom of the skillet.
  9. Return the chicken thighs to the skillet, skin-side up, and bring the mixture to a simmer.
  10. Transfer the skillet to the preheated oven and bake for 25-30 minutes, until the chicken is fully cooked and tender.
  11. Serve warm, spooning the apple and onion mixture over the chicken.

Notes

Feel free to substitute the apple with a different variety depending on your preference, and adjust the seasoning to taste.
