These Chicken Parmesan Sandwiches are a delightful twist on the classic dish, featuring crispy chicken coated in parmesan and panko, laced with marinara sauce and melted mozzarella, all served in a crusty French roll.

- 4 chicken thighs or breasts
- ¼ cup grated parmesan cheese
- ½ cup panko breadcrumbs
- ¼ teaspoon paprika
- ¼ teaspoon salt
- ¼ teaspoon pepper
- ¼ teaspoon garlic powder
- ¼ teaspoon dried basil
- 2 cups marinara sauce
- 4 slices of mozzarella cheese
- 4 french rolls
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, mix the panko breadcrumbs, grated parmesan cheese, paprika, salt, pepper, garlic powder, and dried basil.
- Coat each chicken piece in the breadcrumb mixture, pressing gently to adhere.
- Place the coated chicken on a baking sheet and bake for 25-30 minutes until golden brown and cooked through.
- In the last 5 minutes of baking, spoon marinara sauce over each piece of chicken and place a slice of mozzarella cheese on top to melt.
- Meanwhile, cut the French rolls in half and toast lightly if desired.
- Assemble the sandwiches by placing the chicken on the rolls and adding extra marinara sauce if desired.
- Serve hot and enjoy!
Notes
For extra flavor, marinate the chicken in Italian seasoning for 30 minutes before breading. You can also add fresh basil as a garnish.
